Osetra was the second restaurant we opened during that time. For Sevruga and Beluga, we used the same branding and menus as in Cape Town, as well as the same look and feel, but Osetra we created on the fly. The menu and dishes were some of our best work, but the location was not right for us. We changed the concept, and then decided to rather sell the lease than keep on having to spend our time on a small business.
